Hand cracked halves are the most carefully prepared Greek walnut kernels we supply. Cracking by hand keeps the halves intact, and the kernels are selected in the pale Light and Extra Light colours. This is the grade to choose when the walnut stays visible: on top of cakes, in retail packs and in premium mixes.

Walnut kernel colour follows the international trade scale: Extra Light, Light, Light Amber and Amber. Paler kernels have a milder taste and a more even look in the finished product. Hand cracking yields more intact halves than machine cracking, which is why this grade is preferred whenever the kernel is on show.

Best uses

Choose hand cracked halves when appearance matters:

  • Decorating cakes, tarts and traditional tray bakes
  • Retail packs, jars and gift boxes
  • Chocolate making, with whole halves on pralines and bars

If the walnuts will be chopped or ground, our Greek Light quarters give the same result at a lower price.

Buying Greek walnut halves wholesale

We sell to trade customers only. The minimum order is one 10 kg carton, and larger volumes are priced by agreement. Greek walnut prices change with each harvest, so we do not have a price list: tell us the quantity you need, on +30 2541 200 900 or at sales@carpebo.com, and we will send you an offer with prices. Orders are dispatched from Thessaloniki within 2 to 3 working days of confirmation, across Greece and, by arrangement, to other EU countries.

Storage

Walnut oils oxidise with heat and light, and the kernels pick up odours easily. Keep cartons closed in a cool, dark place, at up to 10 °C and up to 60% relative humidity, away from spices, coffee and cleaning products. In cold storage the kernels keep their colour and flavour much longer.

Frequently asked questions

How do hand cracked and machine cracked halves differ?

Hand cracking leaves more intact halves and fewer broken pieces in the carton. Machine cracked halves cost less and make sense when the kernels will be chopped or ground.

Are all the kernels grown in Greece?

Yes. They come from Greek walnuts of varieties such as Chandler, Franquette and Lara, supplied by growers we work with. For imported kernels see our Light halves.

Can I combine products in one order?

Yes. You can add other walnut grades or nuts from the catalogue to the same shipment, as long as each product is ordered in full trade packs.
