Storage
Pistachio kernels lose their green colour and aroma with light and heat. Keep them in closed packs, in a cool, dark place, ideally up to 10 °C and below 65% relative humidity. Once a vacuum carton is opened, use the kernels soon or reseal them airtight.

In everyday Greek, Aegina pistachio simply means pistachio. The protected designation Fistiki Aiginas PDO covers only pistachios grown on the island of Aegina.
