Pieces 1/8 are walnut kernels in small pieces, roughly an eighth of the nut. They go straight into doughs and fillings without chopping or grinding, which is why we recommend them to pastry shops working in volume. The colour is Light and the taste sweet.

Frequently asked questions
Is this ground walnut?
No. 1/8 is a piece size grade. A small share of finer pieces is normal from cracking.
How does it differ from quarters?
Quarters are roughly twice the size and are usually chopped or ground before use. Pieces 1/8 are used as they are.
How long does it keep once opened?
It depends on conditions. Chilled and well sealed, it keeps colour and flavour for several weeks, while in a warm room it deteriorates faster.
