Uses in bakery and pastry
Corinthian currants are essential for raisin breads and festive breads, sultanas for cakes, sweet breads and cereals, figs for breads, tray bakes and cheese platters, and apricots for tarts and bars. All of them also sell loose or in retail packs alongside nuts.
Storage
Dried fruits need up to 10 °C and below 60% relative humidity. In heat they harden or stick and their sugar crystallises, while humidity risks mould.

Do the figs contain added sugar?
No. The sweetness comes from the figs themselves.
How do currants and sultanas differ?
Corinthian currants are small, black and more intense. Sultanas are golden, larger and sweeter.
