The size grade shows the kernel diameter in millimetres. Smaller grades pay off for praline and ground uses, while 13/15 and 15+ are preferred when the hazelnut is seen whole, in chocolates and retail packs.

Storage

Raw hazelnut kernels are rich in oil and need cool storage. Keep sacks closed, ideally up to 10 °C and below 65% relative humidity, away from light and strong odours. In summer, an unrefrigerated warehouse can quickly change their taste.
